I worked hard to try and scrap each day in January but then realised I was going away for work for 3 days so there was no way I could keep up the pace at that time ... and then kinda gave up ... BUT at least I am up to January 2012 in my scrapbooking now! So in that whole month I should be able to make a good dent in 2012 and may even come close to getting up to date! (one can hope... think it is called wishful thinking though!) Might leave that one for July though as I am away for a few days every month until then.
[#14] Volunteer my time for a charity - DONE!We are fostering kittens at the moment as the SPCA had an influx and needed to send some out until they had space. They are pretty cute ... even if they are totally nuts! Although it is nice knowing that we are able to give them back!
[#28] Bake something new every week for 2 months - DONE!
Lots of yummy treats and "firsts" ... After the run of delicious pies I decided to tackle some other things I had always wanted to try... I made berry soufflés, blueberry meringue tart (first time ever making any meringue), pecan & chocolate chunk pie, orange curd slice, choclate fudge, apricot flan and macaroons!
[#29] Keep my toenails painted nicely for six months - DONE!
I have surpassed the 6 month mark and have managed to maintain pretty toenails now for 7mths! Crazy... And I still have another pedicure to go before the end of March so it looks like they might end up being nicely polished and scrubbed for 8mths.
[#31] Send a hand made, hand written card to 5 of my friends - HALF DONE!
I have made the 5 cards for 5 friends... Now I just need to write in them and send them off/give them out.
[#40] Vacuum out my car 4 times in a year! - ALMOST DONE!
My car is booked for a spruce up in the next week! yay ... pretty clean car again soon... at least it gives me a jump start on my next post!
[#42] Host a freezer foods party - DONE!
I changed this one slightly from having a freezer food party to cooking a bunch of freezer foods for the following month with a friend. Like our own little party and we had heaps of yummy dinners ready to reheat. All these meals have come in super handy on busy nights.
[#46] Drink 2l of water a day for 28 days - DONE!
Wow this was tricky. Some nights I realised at 11pm I hadn't had enough water so was downing a litre before bed... Not ideal for an interrupted nights sleep ;) but got there in the end... Although from now on I think I will aim for a litre with 2 being a bonus!
[#64] Eat at 7 new restaurants
Stephen and I went on a date [#5] and went to Mexico in Takapuna. A pretty cool place actually and I am looking forward to taking Quinn. I think we will skip dessert next time tho and go for ice cream. The service was so fast, it was great.
We went with friends to try Sal's pizza, Takapuna. Huge American pizza slices and few, but delicious toppings mmmmm ... Another place to hit up again.Stephen & I also went out to Burger Wisconsin (not really restaurant but a new place ... and they had a dining area!) on another date night [#5] before going to see The Offspring at Vector Arena [#20] (awesome concert and another double tick on the list)
So that's just 1 more new place to try... Shouldn't be too hard!
[#65] Create a menu plan for 1 month - DONE! I made a menu plan and we managed to stick with it for the month, a few meals got swapped here and there but it was great. So easy to come home and know exactly what we were having... And we have only doubled up on one of the meals (as it is Stephen's new favourite)... Moroccan chicken burgers.
[#73] Take a Dessert course - DONE!
What a breakfast... and lunch! We made 3 desserts in just under 3 hours ... and they were delicious!
*Lemon & yoghurt Mousse with Melon Basil Compote
*Poached seasonal fruit with Almond crumble and creme patisserie
* Rich dark chocolate cherry fondant with caramelised nuts and Tulle
YUM!!! Don't think I will ever make all 3 at once again though - so rich! 1 would be enough.
[# 78] Have 12 Girls Nights out - DONE!
I have managed to tick off my chick nights... Although that wont be stopping me escaping for more!
Spent a night at Silo Park with my buddy Jo where we tried something else new - escargot ... I really shouldn't have inspected the snail before eating it, but with that much butter smothering it - it was always going to taste pretty good!
I saw Les Misérables at the movies... I was expecting to need bundles of tissues so it was nice not to, although it was a pretty emotive movie.
